How to Store Beets in a Root Cellar?

I grow beets. I LOVE beets! I'm the biggest fan of beets that I know. lol They are so easy to grow. Plus, they are so delicious. How can I store them in a root cellar? I always harvest my beets before any of the other vegetables in my garnden. They seem to be more sensetive than the others. I always use a pitchfork to loosten the soil first. So, how do I go about storing them in a root cellar?

  1. Don't try to store very young beet roots.  The older, tougher skinned ones store best.  The old timers left their carrots, beets and turnips in the ground until after a couple of good frosts, then pulled and topped them.  Let them dry on the outside, don't wash but pack in cured dry sawdust, straw or sand.  They will keep for months in a cellar, but by all means check them often.  The newspaper idea may work as well.  If you don't get much snow cover you can also leave them right in the garden where they grew by mulching heavily to keep the ground from freezing and simply digging them up when you want a few.


  2. wrap them in newspaper, and store in a plastic bag loosely, don't close the bag too tight,  leave some holes to let them breathe.
