  1. Definitely add oregano and a dash of sugar :)  Oregano makes everything taste Italian.  If this still doesn't quite solve your taste dilemma, check out the label on a bottle of Italian Seasoning and see what herbs you're missing.  Oh I'd add some green peppers!  I wouldn't add the meat to it if you're going to can but when you go to make it up use Italian sausage as it's so much better than just hamburger.  If the sausage seems too expensive check out the site below and it tells how to get sausage either breakfast or Italian for about $1 lb.

  2. Sometimes a dash of balsamic vinegar can kick up the flavor (although I'm not sure if that would react w/ the can). Also, red pepper flakes can kick the flavors up a notch. If it's not tomato-y enough, add a little tomatoes paste thinned with water. Most spaghetti sauce recipes are taste tested and fiddled with for ages before they are 'right'.

  3. Do not add meat.  It is very difficult for home cooks to can  food safely and at high enough temps to safely preserve meat!

add some oregano, marjarom, let a bay leaf simmer in there a bit, S&P, and a splash of red wine.

  4. That sounds good as is, taste test to see if it needs salt and peper. Perhaps some Worstershire Sauce.

  5. Oregano is missing!

  6. Oregano-and a small amount of sugar (brown or white)-

  7. Hi!! You could add some italian seasoning and you can throw in a can of stewed tomatoes. You can chop up the tomatoes a little before you throw it in the sauce. Don't forget to serve with parmesean cheese.
