  1. does your friend like chocolate cake. If you go to recipe zaar and type in mexican chocolate cake they have a vegan recipe. It has mexican spices in the cake, but you can ommit. But its topped with a choclate ganache and also strawberries. yumm.

  3. Chocolate Layer Cake

    Generous 2 or 3 layer cake just right for birthdays and special occasions.

    Ingredients (use vegan versions):

        3 cups flour

        2 cups sugar

        1/2 cup cocoa

        2 teaspoons baking soda

        1/2 teaspoon salt

        1 tablespoon vinegar

        2 cups water

        2 teaspoons vanilla

        2/3 cup oil

    Directions:

    Pre-heat oven to 350 degrees F.  Mix together dry ingredients in mixing bowl.

    Add oil, vanilla, vinegar, and cold water and beat together until smooth.

    Pour into lightly greased and wax paper lined pans. Makes 3 8-inch layers (bake 20-25 minutes) or 2 9-inch layers (bake 30 minutes) or 1 9x13-pan (bake 40 to 45 minutes) or 24 cupcakes (bake 15-18 minutes).  Let cool in pans about 10 minutes and then carefully turn out on cooking rack.  Peel off waxed paper immediately.  Cool completely and then frost with your favorite frosting.

    Remember this is cake--sweet, gooey and not really healthy--but great for a special occasion.

    Vanilla Cake

    This is a nice vanilla cake that is perfect for a birthday.

    Ingredients (use vegan versions):

        1 cup unbleached organic white flour (sifted)

        1/2 cup organic whole wheat pastry flour (sifted)

        3/4 cup sugar (I used 1/4 stevia powder + 1/2 cup of Sweet Perfection)

        1 1/2 teaspoon Ener-G Egg Replacer

        2 teaspoons baking powder

        1/4 teaspoon baking soda

        1/4 teaspoon sea salt

        1/4 cup canola oil

        2 Tablespoons lemon juice

        1/2 teaspoon vanilla extract

        1/4 teaspoon almond extract

        1 cup cold soy milk

    Directions:

    Preheat oven to 350°F. Spray and flour an 8—inch round cake pan using spray.  Set aside. In a large bowl whisk together the egg replacer, almond or soy milk, canola oil, vinegar, and vanilla until completely combined. In a separate bowl, mix white flour with pastry flour, baking powder, salt, and baking soda.  Dig a well into the center of your dry ingredients and pour in the wet. Gently stir the two together until it looks combined and until all lumps are gone. Be sure not to overmix! Let stand 5 minutes.

    Pour batter into prepared pan. Bake approximately 35 to 40 minutes or until done.

    Cake is done when a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes, then dump out of pan and allow to cool until it's ready to be frosted.

    Before frosting, cut a thin slice off the top of whichever cake will be the bottom half. This way, the top portion will rest evenly on a flat surface.

  5. do a regular search for 'eggless cake recipe'- there'll be plenty of hits :) sorry i don't have a recipe to hand, i usually do, but i'm a greedy cow and i like to make things as rich as possible! lol!
