How to be a better server?

i have worked in the most disorganized restaurant for years.

now i work at an establishment (bar/club) that prides itself on amazing service, and we have secret shoppers that come in, and when a server gets a bad review, they are fired.....no ifs, ands or buts. (did i mention, i really need this job)

- i have dropped 2 trays in the past 2 days. (my normally cool manager had steam coming from his ears)

i got triple sat and weeded and nearly cried in my section.

- we have amazing, amazing servers. i want to be good, SO bad..when i get stressed, i immediately fall apart.

- i have regulars who love me.

- god, i try so hard!

how can i be a better server and get respect from my co-workers and boss. and not drop trays or grip them awkwardly.

  1. You need to calm down and just look at your job as an opportunity to have conversations with a lot of cool people. Treat your tables like your friend, show that you can relax and handle it when you get over sat. Also, when you feel like your tables will maybe be suffering a little because you are behind, just inform them, say something like "Hey folks, I have gotten a little busy in the past few minutes, and I just wanted to let you know that your drinks/food/boxes is on the way and I will get it to you as quickly as a I can." Most of the time people appreciate that you let them know that you are a little busy and that you haven't forgotten about them. As far as your co-workers and boss, just do your job, smile, don't freak out because people will understand if their service is a little slower as long as you keep them informed. Just compose yourself and have fun because it is supposed to be a pleasant experience for you and your customers.

  2. Don't be too slow or too fast throw some joke here and there if you personally like a customer maybe you could give them a drink on the house.

Just have fun and don't get stressed or worried over things too much.

  3. Not everyone is cut out for the job.  You're not.  People think waiting tables is easy to do and easy money.  Too many stick with it even when they find out it's not and that they aren't cut out for it.  Find another job.

  4. When you really get in the weeds - stop for a minute. Just let your mind get reorganized. Remember, it's not rocket science, it's table service. Ask for help when you need it and keep on an even keel. You'll only get deeper in the weeds if you start running about and crashing into things so remember to pace yourself.
