What works for me is 1st you have to love what you do and believe in what you sell. I have been a server off and on for 25 years. I have been in fine dining for the last 15. Every guest is different, 1 might feel rushed or pushed at any suggestion another might get overwhelmed with too many choices and need your help deciding. Over time guests become predictable and you will be able to know what they want even when they don't. In the meantime remember-

Stay in your station even if it's slow because

* if the host see's that you are right there ready to greet the guest at the table then your chances of being sat more tables is high. which will bring up your sales.

* guests will drink more wine and order more drinks if u belive that what you sell is great
