  1. Ingredients



    - 2 lb (cut into 8 pieces)  Chicken

    - 3 cups Basmati Rice

    - 6 whole Green Chili

    -  to taste Salt

    - 1/2 tsp Sugar

    - 1 cup Milk

    - 1 cup Curd

    - 1/2 tsp Saffron

    - 5 whole Cardamom

    - 1 inch (whole) Cinnamon

    - 8 whole Cloves

    - 12 whole Peppercorns

    - 4  Bay Leaf

    - 1/2 cup Cashew nut

    - 1/2 cup Raisins

    - 5 medium (finely chopped) Onion

    - 2 tsp. (grated) Ginger

    - 2 tsp (paste) Garlic

    - 3 tsp Red Chili Powder

    - 3 tsp Coriander Powder

    - 1/2 tsp Black Cumin Seed (Shahi Jeera)

    - 3/4 cup Ghee

    Instructions



    1. Marinate chicken pieces with curd, two bay leaf and salt.

    2. Heat milk and soak saffron. Keep aside.

    3. Boil rice with 5 green chilli, two bay leaf and whole black pepper in enough water. Ensure that rice is about 3/4th cooked. Drain water. Spread rice on a dish.

    4. Heat ghee. Add cardamom, cinnamon and cloves. Add three onions chopped.

    5. Add ginger and garlic and fry till light brown.

    6. Mix red chilli and coriander powder in little water and add. Add Shah Jeera. Cook for 3 to 4 minutes in medium heat.

    7. Add marinated chicken pieces and cook till oil starts separating out. Add sugar and salt as reqd.

    8. Add cooked rice. Add saffron soaked milk. Add cashew nut and raisins (kismish). Mix properly.

    9. Cook in very low heat or bake in preheated oven for 10/15 minutes.

    10. Fry two chopped onions. Garnish with fried onion and serve hot.


  2. OH! its very easy i often make biryani. All you need is to take biryani masala pack of any company brand if you are making it with 1.5 Kg of meat then use same quantity of rice and one pack  of masala.

    1. You have to fry 5-6 onions (thin julienne).

    2. Add 8 tomato in it with 2 tbspn of ginger and garlic each and cook all these till tomato become completely tender.

    3. Add biryani masala pack in it and mix well.

    4. Add meat and water in it (chicken or beef) in case of beef add more water to tender it and leave at low flame till meat become soft.

    5. After meat become tender dry all the water and cook untill oil starts to separate from the gravy.

    6. In another pan half boil the rice ( add 2 tbpn of vineger in so that rice remains fresh)

    7. Now layer all these; first put layer of rice and pour some meat gravy on it and add coriander leaves, mint leaves and green chillies. Make another layer of rice and do the same. In the end make last layer of only rice and add some food color on top.

    8. Now cover the pan properly and put on high flame until steam starts to come and then slow the flame and cook only for 10 minutes more.

    Masala biryani is ready.
