How to cook meatloaf with these ingredients ?

I want to make meatloaf with this stuff: (the way my gma used to make it.. not sure how much)

ground beef

bread crumbs

bbq sauce

ketchup

hot sauce

eggs

onion

I am using a half pound of meat (just for two people) so how much of each?

  1. That's not enough meat...it will shrink as it cooks.

    Use one egg,

    1/4 cup chopped onion

    about 1/4 cup ketchup

    1/2 cup bread crumbs

    at least one lb of meat

    aw  heck...here's my recipe:

    - 2 lbs lean ground beef

    - 1 medium chopped onion

    - 2 eggs

    - 1 8 oz can tomato sauce

    - 4-5 splashes of Worcestershire sauce

    - about 3/4 of a stack of good saltine crackers, crumbled

    Instructions





    1)    You want a consistency that is not too dry, but not sloppy wet. Add more crackers if it's too wet. Add some ketchup if it's too dry.  





    2)    Mix all the ingredients well. Form into a loaf shape on a baking sheet with edges, because you will get juice out of it. Bake at 350 degrees F for an hour. Remove from the oven and slather the top with 1/4 cup chili sauce mixed with 1 Tablespoon of brown sugar. Bake another 10 minutes.  


  2. With 1/2 lb of beef, use 1/4 cup bread-crumbs.

    But that's not much meat for making a loaf.

    About 3 oz pork sausage meat would add some flavour.

    Maybe 1/2 cup of chopped onion would be good.

    Saute in 1 tbsp of oil until softened, with sausage meat.

    Use only 1 egg to bind everything together.

    Pack mixture into a loaf pan to bake @ 400F for 45 minutes.

    Mix 1/2 cup Ketchup, 4 tbsp BBQ sauce, 1 tbsp hotsauce.

    Pour over top of loaf pan while baking.

  3. Season 1/2 lb of ground beef with 1/4 cup of bread crumbs, 1 egg, 1/4 of small onion, 1 Tbsp of ketchup, 1 Tbsp BBQ Sauce, a dash of hot sauce, mix well and shape into small loaf. Bake at 375 for 20 to 30 minutes until done.  

  4. preheat oven to 350. In a bowl, mix the 1/2 lb of meat, 1/2 of one egg, and 1 cup of breadcrumbs...if you need to add the rest of the egg, that's fine. it should be firm, but not dry. toss in finely diced onion (use the amount you like) ..I would mix the ketchup & bbq sauce (about a 1/4 c. each)  & add a dash to a few dashes of hot sauce to taste, and put that over top of the meat loaf. bake in a non-stick loaf pan for about 45-60 minutes, until it is cooked through. there are so many ways to cook meatloaf, but you said you wanted it like g'mas...I don't blame you-don't they always do it the best?

  5. off the top of my head,

    1.5 pounds ground beef

    2/3  cup bread crumbs

    2-3 Tables BBQ

    1/3 cup ketchup

    hot sauce to taste

    2   eggs

    1 medium onion, diced

    combine all, form into a loaf,   bake uncovered at 350 for about an hour.

    serve with gravy or glaze with ketchup.  I would add a green pepper, diced and maybe a little prepared mustard (2-3 tables)  Good Luck

  6. This is my Mom's and it's awesome, flavorful and way above average!  It's simple too -

    Momma's Sock It To Me Glazed Meatloaf:

    2lbs 80% lean ground beef (it's important for flavor not to use the 85% or 90% lean beef - it will come out DRY and lack flavor)

    2 eggs, beaten

    3/4 cup seasoned bread crumbs (like 4C brand)

    1 teaspoon garlic powder

    1 teaspoon onion powder

    1/2 teaspoon black pepper

    3/4 teaspoon salt

    3 tablespoons Worcestershire sauce

    few squirts of ketchup

    1/4 cup finely minced onions (sauteed in a little butter first to soften)

    1/4 cup finely minced green and/or red bell peppers (sauteed first in a little butter to soften)

    1/4 cup finely chopped fresh parsley

    1 tablespoon dijon mustard

    Mix all ingredients together and form a big ball. Be careful not to over mix - a good secret of meatloaf is to mix quickly and without too much care.  Over mixing can cause a bad texture to the finished product (FYI: same rule of thumb applies with making meatballs).

    if it's too wet and sticky sprinkle more breadcrumbs.

    Grease the bottom of a glass or corningware dish really well with butter.  Put the ball of meat in the center and form a nice oval "loaf" about 4" high or so.  seal up any "cracks" by pushing with your fingers.

    Make the glaze for the top:

    in a saucepan combine 1/2 cup ketchup, 1/4 cup apple cider vinegar, 1/2 teaspoon ground coriander, 3 tablespoons brown sugar, 1 teaspoon hot pepper sauce (like tobasco or frank's red hot).  Heat and stir together till dissolved - about 3 minutes.

    Spoon 1/2 of the glaze over top of meatloaf and save the other half for serving with the slices of meatloaf.

    Bake at 375 for 65 minutes.  Let rest 5 minutes after it comes out of the over and serve.  




  7. 1/3 cup bread crumbs

    2 teaspoons BBQ sauce

    2 tablespoons kethup

    sprinkle of hot sauce

    1 large egg or 2 small

    1/3 cup diced onions

    Mix all in bowl. Form in deep small bread pan. Lightly coat top of meatloaf with kethup to prevent drying.

    Cook 350 for 50 minutes.

  8. A half pound of meat probably isn't enough...it will be a small meatloaf...

    Maybe 1/2 pound bread crumbs, 1 egg, 1/4 c diced onion, 2 Tb bbqsauce.  

    If it were me, I"d serve the ketchip and hot sauce on the side.

    Mix all the ingredients with your hands, put in small, preferably glass loaf pan and bake at 350 degrees, probably hfor about 45 minutes to an hour.  If you add another 1/2 pound of beef and double everything else, it will need about an hour and 15 to 25 minutes.

    When I make meatloaf I usualy use a mix of beef, veal and lean pork.  I rarely use turkey becuase it changes the texture a lot.
