Ya know, those things that are like bananas and they are kinda like fries? how do you make them?

  1. Another way is to peel and slice, then fry them in a skillet or grill them. Very ripe plantains work best for this. In the Bahamas, some of our guests would not eat deep fried foods, so we made a grilled version of Conch, and the grilled plantains went quite well with them. They call them plantins down there, by the way. Just a ting you learn on da island, mon.......


  2. ... well you slice and then fry them in a pan of oil, until they're no longer raw, and a golden color. It burns easily so you should have a plate with a napkin on it ready to put the already cooked plantain.

    Here's two recipes for either ripe or green plantain.

    The picture for the second one's a bit misleading. There should be more than five slices worth. If not, you've either cut it too thick or you've got a banana. You should cut the plantain  a quarter inch thick.

  3. Fried Green Plantains (Tostones)

    Ingredients:

    2 plantains (green)

    2 cups canola oil

    Salt, add to taste

    In a large frying pan or deep fryer,

    heat the oil. In a separate plate, peel and cut the plantains into one inch rounds. Place them in the hot oil and cook for about 3 minutes while turning. Remove from oil and pat dry with a paper towel. Place each round inside a sandwich bag and smash it with the bottom of a bottle or with a "tostonera". Put them back in the hot oil for about 3 minutes turning until golden brown on both sides. Remove from oil and pat dry with a paper towel. Add salt to taste.

  4. The yellow ripe ones I like to fry or mash into desserts and sweet dishes even a pudding with cornmeal, the green ones are best peeled and boiled like potatos, even steamed and sauted like homefries.

    In Jamaica we used them with other yams and eddoes in a coconut mlik based fish stew called "Rundown".

  5. You could always try making a Banana Cue... just roll it around in some brown sugar and deep fry it. Delicious.

  6. When we BBQ, the plantains are laid out, unpeeled, with the stuff we are grilling. No additional pots to clean.

    Plantains could also be peeled (with a potato peeler) and sliced, then deep-fried just like potatoes and yams.

    Another method is to boil the plantains, skin on. When done,  peel and slice, sprinkle with brown sugar and cinnamon, dot with butter and bake. Treat this way just like pumpkins or yams as side dish or dessert (depending on the amount of sugar used).

    You can even make dessert spring rolls. Peel and slice the uncooked plantain, sprinkle with brown sugar, and wrap in lumpia or spring roll skin. Deepfry until golden. Dust with confectioner's sugar and serve.
