  1. it's simple. get the briquets to red hot; set the tri-tip on the grill. pour garlic salt on it. dont worry about the fat burning that's normal; the outside can be charred that's ok. it takes some time. turn it over with a fork. let it cook. when you think it's almost done, cut into it, if it's not cooked you'll know, if it's ready you'll see. approx cooking time is 30-40 min but check on it and turn over a few times.

    tri tip is best medium rare.  and when it's done dont cut it right away. let it cool a little and let the juices flow around. then slice it up. good eats. good sides are garlic bread, salad(your choice), beer is good also.


  2. I rub a little olive oil on the tri-tips, then encrust them heavily with kosher salt, cracked pepper, rosemary, and (sometimes) some no-salt spicy steak rub (red pepper, garlic, etc.).

    Then I grill them on the highest heat possible for six minutes (turning every 90 seconds or so) with the lid down, then I transfer them to indirect high heat (off the flames) for another 6 minutes. Pull off on a rack to rest for 5-10 minutes, then slice them into 1/4" slices across the grain.

    This produces very juicy, perfectly seasoned, easily portioned steak slices that are between medium-rare and medium well (depending on how big the cuts are and whether the slice comes from the middle or the ends). Best of all, it only takes about 20 minutes total to prepare.

If you have a smoker (either electric or charcoal) you can smoke tri tip (season with salt and pepper) for about 4 hours over hickory chunks.  You can do several (or as many as you can get in the smoker) and wrap them tightly in foil after they're cooked and cooled and freeze.  Thaw them when ready to serve...delicious and great to have on hand.
