From my very own kitchen.......

Ahem.

Fresh basil, dried oregano, 2 tins of chopped tomatoes, a good dollop of tomato puree, I medium onion, way too much garlic a pinch of dried chilli flakes, a good splash of balsamic vineagar a tsp of sugar and a glass of decent red.

Sweat the onion and garlic til soft, lash in the vineagar and wine and turn the heat up until it's all gone syrupy. fire in the tomatoes and turn the heat down. Next it's the puree, dried oregano and chilli flakes and sugar. Simmer for a couple of hours until you have a very tasty dark red sauce. Add the basil half an hour before it's done or it'll go slimy.

Add whatever veg you like I tend to go for courgettes and aubergines.
