If the horse is registered with the Jockey Club the breeders name is right on the papers and they would be the original owners.

Also you can look at the track record and see all of the transfers on JC registered horses. The transfer papers are attached to the registration papers.

Most of the time the breeder is listed on registration papers and that information never gets changed.

If you have a Jockey Club registered horse you can log on to the interactive registration page, type in the horses name, birth year, and dams name and it will show you the name of the breeder who is most likely the original owner when the horse was registered.
