How do you get a good gravy out of a flavourless meat.

  1. I used to work with a lady who was a wonderful "homestyle" cook, and her roast beef was killer!  Her secret?  Au Jus mix that comes in an envelope in the spice aisle.  She would just whisk it into the flour and water mixture she used to make gravy, and it added a super beef taste.  I also have some amish cookbooks that many of the ladies add "kitchen bouquet" to their gravies.  It's a small brown bottle you can get in the spice aisle.  My grandma used to use it for her roasts.  Finally, another way is to use dried soup mix.  Lipton makes a beefy mushroom that makes a good gravy when you use it to season the beef.

Saute some onions in a little oil.  Add the kitchen bouquet and the gravy that you have.  Season really well with salt and red pepper.  To thicken add some flour or cornstarch mixed well with some broth or some of the gravy.  Add back to the gravy and bring to a boil.  Add back to your roast and let cook.  Good luck!

  3. Roast Beef Gravy:

    3 Tb worcestershire sauce

    3 cans cream of mushroom soup

    1 lg can of mushrooms

    3 pkgs  onion soup mix

    Mix all ingredients in lg sauce pan;med-heat bring to boil; then simmer on ow heat 5 to 10 minutes or until thicken;then pour into gravy dish or over meat and potatoes.

    Hint: Quick way is to pour over meat and bake @350 for 31/2 to 4 hrs or until meat is tender.

  6. Take the dripping from the roast and add onions. But first saute the onions and garlic together and add the drippings from the roast to it and then add a can of beef gravy. Boil it for awhile until it gets thick!

Saute about 1/2 cup diced onion in 2 Tablespoons of butter.  When the onion is tender add a clove of minced garlic and cook another minute.  Pour the juices from your roasting pan into this mixture.  Scrape up the bits of flavor stuck to the pan.  Add this to the mix.  Taste.  If you still need more flavor add a bullion cube or a little soy sauce 2 to3 Tablespoons. Thicken with flour or corn starch.  Season with salt and pepper to taste.  That should do it.

    Something to think about.  The only time I've had to "doctor up" the gravy for any beef roast was back when I didn't understand how to handle various cuts of meat.  My mother used to throw a hunk of meat in the oven and over cook it. So, that's what did for several years until I tasted my first really great pot roast.

  8. Add beef broth or boullion.  If it still need something, try some Worcestershire or steak sauce.  Make sure it is seasoned well with salt and pepper.
