How to freeze stewed tomatoes

  1. I would make them but right to the point where you add the thickening agent..don't thicken them and freeze them at this point.

    When you go to use them thaw them and reheat and thicken them at this point.

Prepare them as you wish, then just put them in freezer containers or plastic bags, and freeze.  The best way is to use a vacuum pack sealer with plastic bags, but for tomatoes, you need to freeze them in the bag first(without sealing them), then take them out and seal them, because of all the moisture you cant do it all in one step.  You can also freeze tomatoes by blanching them enough to remove the skin, place them whole on cookies sheets, freeze them, then place them in bags or freezer containers.  Tomatoes are one of the easiest things to freeze.

  3. I'm imagining they are cooked down into a sauce so just put them in a plastic box, slap on the lid and bung them in the freezer.

    If you want small portions (baby food sized) puree first and freeze in ice cube trays or bags.

  4. if you want to freeze whole tomatoes, set them on top of a cookie sheet and freeze them, then transfer them into freezer bags.

    For cooked tomatoes store them into containers or freezer bags .

  5. Couple of ways--

    Canned?  Pour into freezer containers with room to expand, express all the air you can, and freeze.  Do not overload your freezer all at once-- give it time to recover.

    Fresh?  After stewing/seasoning, continue on as above.  

    New item I like-- Reynolds had a vaccume item-- need the exhaust handheld and bags.  I found quart sized and gallon sized at my Neighborhood market where the foil is placed.  I found they worked really well-- especially using my work table with the exhaust valve flat on the table and holding the filled bag over the edge.  I put up about 25 pounds of sliced fresh peaches in the things.  Really quick and easy. Just follow the directions.
