Question:

How to get real taste of chinese fried rice......what sause do i need?

i just cooked egg fried rice but it didnt come out like the chinese takeaway....I used SOY SAUSE AND SESAME SAUSE but it didnt taste the way it suppose to taste.....is there any other sause i need to use?

  1. I sprinkle some chicken oxo cube into it near the end of cooking (and like yourself also use soy sauce and sesame oil).  Sometimes I like to add a few finely chopped spring onions.  Oh and use brown rice - it takes longer to cook but is more like chinese takeaway rice.


  2. I think if you're using Maggi Soy Sauce, you have to look at what type of soy sauce you are using and where it's made (yes it does taste different). For an authentic chinese taste, maybe you'll want the one made in China. In my opinion, I like the one made it France the best but it costs an extra couple bucks.

    I would definitely agree on the chinese 5 spice, I made it with Delia's recipe and found it devine!  Really easy too.  Remeber to let the rice cool before frying it though.

  5. no sesame sauce, just light soy sauce, and dark soy sauce.

    try this recipe:

    800 g Cold, cooked rice

    2 Large eggs, beaten

    3 tbsp Oil

    2 Sprigs spring onion, chopped

    3 tbsp Water

    2 tbsp Light soy sauce

    1 tbsp Dark soy sauce

    Salt and pepper to taste

    Start by putting 1 tbsp of the oil into a heated wok, followed by the beaten eggs. Cook the egg gently until it has mostly solidified. There is no need to break it up at this point. It is important to keep it on a low-medium heat and not to cook it too long as otherwise the egg will turn out dry and rubbery.

    Remove the nearly-cooked egg from the pan. This will be returned to the pan later.

    Add the remaining oil to the wok and turn up to medium-high heat.

    Add the cold, cooked rice. Start working the rice by breaking it up by pushing the back of spatula onto any lumps. Add a little water if required - this will make the rice more pliable and less separated. Cook for approximately 1 minute.

    Once the rice has been heated through and is mostly seperated, add the dark soy sauce and the light soy sauce and season to taste. The dark soy is used for colour, whilst the light soy is used for flavour. Mix the rice well to ensure the soy sauces are well distributed throughout.

    Add the pre scrambled egg and break up in the pan using the spatula. Stir frying for an additional 30 seconds.

    Finally, add the chopped spring onions, stir briefly and serve.

  6. Oyster Sauce or Hoisin Sauce. I perfer to use the Oyster sauce because its more authentic in taste plus it contains msg, soy sauce in it already.

    Stop using the sesame sauce.

    also day old cooked rice works better

  10. I know what you're talking about. I use a sauce called Leekumkee vegetarian stir fry shitake mushroom flavor. This is excellent for stir-frying. (It's about  $ 4.00) Trust me it works sooooooo well. It taste so good!

  11. Well, I lived in Taiwan for a long time. There is absolutely no consistency among the cheap street shops selling fried rice. It isn't like the stuff you get here.

    The usually seasonings for fried rice in Taiwan include soy sauce, white pepper, garlic, and perhaps some sesame oil, a small bit of fresh ginger, or small sprinkle of sugar.

    I *really* like the black bean paste (sometimes sold as "black bean garlic paste". If you like a Cantonese flavor, you might add some oyster sauce, which is commonly available in U.S. stores.

    Some people really go for the Hoisin sauce.

  12. Theres this sauce called Maggi that I use, made from the asian part of NESTLE, its almost like soysauce but better and saltier.

    You could also try black bean chile sauce, my dad eats it.

  14. well I'm no Chinese fried rice expert but you could use chines 5 spice and tarioci i spelled that way wrong lol but yeah if you have an international foods store they would know more than i do now dont hold me to this because i am no chines chief lol but it might tast good ne way lol
