Question:

How to keep lumpia/eggroll warm and crispy.?

my mom plan to fry all 200 lumpia today so that i can sell it at the convention...

but then.. by the time its all fried... then about 30 minutes drive.. the lumpia will get cold and soggy, you know?

im asking how to keep its crisp and warm other than aluminum foil.....

  1. layer paper towels over each layer of lumpia.that takes care of the soggy part.


  2. DON"T LAYER PAPER TOWEL!!

    it will keep the moisture next to the food.

    maybe a cooling rack.

    if you wrap tight, it will hold moisture and get soggy, so don't wrap/seal them.  You might have to reseal them or sell them as frozen to be taken home and enjoyed.
