How to keep muffins from sticking to the muffin cups?

I invented a recipe yesterday for some spiced banana muffins. They turned out great, except they stuck the to paper muffin cup? What's a good way to prevent this? And what causes it?

  1. Yes, spray the cups with Pam.


  2. Spray the muffin pan with Pam then dust with flour.

  3. Cooking Spray, pam is the best (for me at least). Or you could grease them with butter...melt it in a class bowl, then brush it in with a cooking brush. And no it won't make a difference. GOOD LUCK!

  4. If this is a personal recipe than perhaps your using too many sugars. If you only use one sugar, it tends to burn. However, if you use TWO sugars, they wont burn. Two sugars create a carmel where as one acts as a bonding agent. So try adding your second sugar before you change any of your oils and ot cooking techniques.

    Options for your second sugar....

    Corn syrup, honey, brown sugar, granulated white sugar, powder sugar, cane sugar and maple syrup (not recommend for baking).

    It's a science thing.

  5. Maybe you could try spraying the paper muffin cup. I personally never use the paper muffin cups for that precise problem. I just spray the muffin tin an they never stick.

The only way I know of to alleviate this problem is to use washable/reusable silicone muffin cups.  They come either as a big pan of cups as well as individual muffin cups.  I bought mine at Walmart.  Muffins I've baked come out very cleanly this way.  I too use applesauce in place of oil in my muffins - to make them low fat.

  7. Try cooking them without the muffin liner and spray the tins with pam.  When you have little fat in a recipe it is hard for them to not stick, so try without and see if that works.
