How to keep trays of sandwiches cold.?

I am hosting a wedding reception and have hired people to make sandwiches. The reception hall does not have a kitchen so I have to stage and keep 160 deli sandwiches cold for several hours before they will be eaten. I'm worried about them getting soggy-any advice out there??

  1. Place the sandwiches on a try- Line it with Kitchen paper first-place the sandwiches one on top of each other- Once you have a pile of 10 sandwiches( plate should be high enough so the sandwiches do not topple- take a real clean  light towel rinse it in COLD water- squeeze off the  water and  lay it over the sandwiches covering the  whole platter-Pl see that the towel is just damp. Now cover that with CLING film- This will help to retain the moisture- Now safely keep it in the fridge

    You will find the bread used will be very fresh and it will be  as if the sandwiches were made just moments before!
