How to make 100% homemade wine?

i mean homemade 100%, no kits, like they use to do back in the day. i want to know how to make everything from the yeast to the acid at home without a kit. i live on a farm so i mostly have everything i need right infront of me. anybuddy know?

  1. The most natural way to produce wine is to press the grapes.  You can use a number of different methods to do this.  Anything from a fruit press, juicer, to have the ladies hike up their dresses and stomp away.

    Collect the juice into containers, and let it naturally ferment over a period of time.  You really have to keep tasting the wine over a period of months, and when it tastes good to you, serve.  You could bottle at this point, or, even easier, just siphon into a serving vessel - GOTT coolers with the serving spigot work pretty well.

    Advantages to this method:

    Positively easy

    Disadvantages:

    1. Wild yeast may or may not produce a drinkable wine

    2. Full attenuation of sugars (fermentation) may or may not occur.

    3. Oxydation by exposing the wine to air

    You could really improve the method above by adding sulfites (camden tablets at beer/wine making shops) to the finished product to kill off wild yeast and bacteria.  Then purchase a good wine yeast to ferment.  After fermentation, bottle the wine to prevent oxydation.

    Obviously the most of the great wine producers follow even more complex procedures to make their wines.  Acidity tests, to make sure the must is conducive to yeast, etc.  But you should be able to make a decent wine by following the above procedures.
