  1. Chili paneer is like a curry, only the sauce is more a tomato based sauce, made with curry spices and either fresh or dried chili's, for me I prefer the hotter ones.

I start with some fine chopped onions, a bit of  fresh ginger, 1 clove of garlic, the add some powdered cumin, coriander, fenugreek and some fresh chili's, finely chopped and for kick a few dried really hot chili's, saute this add some veggie broth (1 cup) and simmer for 5 minutes, I then add some tomato sauce (3/4 cup, small can)and continue to cook, in a separate pan brown the paneer in a bit of oil, cut it in small squares, brown on all sides for 2-3 minute on medium  heat.

Add the paneer to the sauce simmer for 5 more minutes off the heat add some yougart or sour cream even thick cream is fine and a bit of fresh chopped coriander and some shredded fresh ginger, serve with a nice rice pilaf or plain rice, naan or chapati are fine to if your limiting your starch intake, this recipe can be used for spinach based paneer dishes to, just add fresh or frozen spinach were the tomato sauce was added in this recipe.
