  2. Some rice is just yellow, however saffron is a spice that generally turns rice a very yellow color and could be used in their fried rice recipe.

    Here is a recipe for Chinese fried rice. You need cooked rice in the recipe so I put how to cook rice in as well just in case ;P

    Basic tips for cooking rice:

    -Always use long grain rice - short grain rice is used only for desserts and snacks in Chinese cooking.

    -Rinse the rice in water to get rid of excess starch.

    -Use 1 cup rice to 1 1/2 cups water.  For example, when cooking 2 cups of rice you would use 3 cups of water.

    -Bring the rice to a boil at medium heat (about 4 on the dial).

    -When boiling, turn the heat down to medium low (about 3) and tilt the lid on the pot. This allows the steam to escape.  

    -Let the water evaporate.  When you can see craters (holes) in the rice, put the lid on tight.

    -Turn the heat to low, and simmer for another 15 minutes.  

    -Fluff up the rice, and serve.

    Here is a basic recipe for fried rice that you can adapt depending on what vegetables you have on hand:

    Fried Rice Recipe:

    Serves 4 to 6 (obviously you can divide recipe in 1/2 for less servings)

    Ingredients:

    4 cups cold cooked rice

    4 tablespoons oil

    3 beaten eggs

    1 teaspoon salt

    Pepper to taste

    1 scallion(or 1/2 yellow onion), chopped fine

    Directions:

    -Break rice apart with wet hands

    -Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.

    -Add scalions (or onion). Cook for 1 minute

    -Make a well in center of rice.

    -Pour in beaten eggs. Stir eggs until they are scrambled.

    -Then stir-fry eggs into the rice until thoroughly blended.

    -Add salt and pepper. Stir-fry 30 seconds.

    If so, there are a number of different ways of doing it.

    1  You can make an omelette first, chop, and add to the rice as you're frying it. This gives white rice with yellow pieces of egg.

    2  You can push the rice aside as you're frying it and add the egg to let it cook a little before mixing in. This gives pieces of egg which are a bit more blended with the rice, depending on when you stir the rice back in.

    3  Another way of making it semi-blended without risking overcooking your rice as you stir the egg is to add the egg first as if making an omelette, then put the rice in on top when the egg is half cooked, and stir thoroughly to break up the base of the egg.

    4  But to get all-over yellow rice, the trick is to add beaten egg to the warm cooked rice in a bowl and beat well, before adding to the pan to fry. This gives rice with a golden appearance, without large pieces of egg.

    After the rice is cooked, you can add seasonings to taste: salt, pepper, soy sauce, rice wine, whatever you like. Just add a very small amount.

    add chinese salt..black pepper...vinegar,soya sauce, chilli sauce! cook these in oil for 5-8 mins!

    then in boiled rice add these veggies!

    then make a  simple omlette..with salt and pepper! add that in chinese rice! and add some yellow color too over the rice ! that would give the yellow color!

  5. Authentic Chinese rice is not yellow, but brown from the soy sauce. Some Chinese make the rice yellow because the hispanics like yellow rice so they get it from them. But real Chinese rice is brown not yellow and it tastes way better.

  7. The best fried rice I've ever seen made is not yellow, but brown from Soy sauce.  I believe that the yellow color may come from saffron being added to the rice.

    The way that I've seen fried rice prepared is as follows:

    1. Pour some vegetable oil in a deep frying pan.

    2. Crack two eggs breaking the yolks and scramble quickly in the oil until firm.  

    3.  Add freshly steamed cooled white rice (about 3-4 cups) to this egg mixture along with a blend of diced carrots and peas.

    4.  Stir fry rice mixture adding soy sauce,butter, pepper and toasted sesame seeds to your taste.

    This version is for at home cooking.  The actual prep was done at a Teppan table on a large stainless steel cook top.

    Also, this recipe may be from Japan and not china, but it is still wonderful.  The sesame seeds make it extra special!

  8. the egg yolk makes it yellow. the recipe varies. you can add carrots,peas,meat,eggs, etc. also you beat an egg and put it in with soy sauce which gives it flavor and color.

    Fried Rice

    /4 cup finely chopped onions

    2 1/2 tablespoons oil

    1 egg , lightly beaten

    3 drops soy sauce

    3 drops sesame oil

    8 ounces cooked lean boneless pork or chicken , chopped

    1/2 cup finely chopped carrots (very small)

    1/2 cup frozen peas , thawed

    4 cups cold cooked rice , grains separated (preferably medium grain)

    4 green onions , chopped

    2 tablespoons light soy sauce

    Directions:

    1.    Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.

    2.    Allow wok to cool slightly.

    3.    Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.

    4.    Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.

    5.     Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.

    6.     Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.

    7.     Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.

    8.     Set out additional soy sauce on the table, if desired.

  10. When I make fried rice, I use soy sauce with the white rice. (It makes it brown instead of yellow) Add in small chunks of meat, carrots, peas, onions, eggs.
