Question:

How to make a good grilled cheese sandwich?

i never seem to make them correctly

it would help to either tell me the right microwave or stove top

directions to make a good one with cheddar slices, cut cheddar, or

that new mozza-cheddar cheese (shredded)

  1. alright, get a skillet, you dont need to put oil or butter or anything on it just let it heat for like minute or less. but before you do that get everything ready - butter one side on 2 pieces of bread and put the cheese between them with the buttered sides on the outside. then put it on the heated skillet. the only hard part is flipping it to the other side.

    2   slices Food You Feel Good About Country White Bread

    2   slices (about 1 oz each) Black Diamond White Cheddar

    3   paper-thin slices (about 1 oz) Italian Classics Proscuitto

    1   Tbsp Wegmans Pure Olive Oil

    Top each bread slice with slice of cheese. Top one side with prosciutto. Combine both halves. Drizzle outside of sandwich with half of olive oil; turn over and drizzle the other side with remaining oil.

    Heat pan on MEDIUM for 1-2 min until hot.Saute on both sides to desired brownness.

    *Grilled Mozzarella and Tomato Panini Sandwiches

         8 slices sourdough or Italian bread

         8 slices Mozzarella cheese

         1 large tomato, cut into slices

         1/2 cup pesto

         2 tablespoons extra virgin olive oil

    Preheat grill for medium heat. Place cheese on 4 slices of bread. Spread pesto over cheese and top with tomato slices and remaining bread. Brush both sides of sandwiches with oil and place on the grill. Cook each side for about 4 minutes, or until cheese is melted. Remove from heat and serve.

    *Grilled Apple, Bacon and Cheddar Sandwich with Roasted Red Onion Mayo

    2 slices (1/2-inch-thick) sourdough, multigrain or another hearty bread

    4 slices thick-cut bacon, cooked crisp

    Preheat a seasoned grill pan or griddle over medium heat. Assemble this sandwich just as you would a traditional grilled cheese sandwich: spread 1 slice of bread with some Red Onion Mayo, then top with 2 slices Cheddar, the bacon, the apple slices, then 2 more slices of Cheddar, finishing with another mayo-slathered slice of bread. Butter the outsides of the bread and transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.

    ----Roasted Red Onion Mayo:----

    1 medium red onion, chopped

    2 teaspoons olive oil

    Salt and pepper

    1 cup mayonnaise

    Preheat oven to 375 degrees F.

    On a small rimmed baking sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally. Remove from oven and let cool. Transfer to a food processor and buzz until finely chopped. Add the mayo and pulse until smooth and combined.

    *Grilled Mozzarella Sandwiches

    1 pound fresh buffalo mozzarella, cut into 4 equal pieces about 3 inches by 4 inches

         Eight ½-inch-thick slices firm white sandwich bread

         2 large eggs

         ½ cup heavy cream

         1 teaspoon fresh thyme leaves

         1 teaspoon salt

         A grating of nutmeg

         ¼ cup extra-virgin olive oil

         2 tablespoons unsalted butter

    Place the mozzarella on 4 slices of the bread. Cover with the 4 remaining slices to form sandwiches. Trim the crusts off to make perfect 4-inch squares.In a wide shallow bowl, whisk the eggs. Add the cream, thyme leaves, salt, and nutmeg and whisk until well blended.In a 10- to 12-inch nonstick sauté pan, heat 2 tablespoons of the olive oil over medium-high heat until smoking. Add 1 tablespoon of the butter and cook until the sizzling subsides. Dip 2 of the sandwiches into the egg mixture, turning to coat, place in the pan, and cook until golden brown on first side, about 2 minutes. Flip over and brown on the other side.     2 teaspoons canola oil

    1 large red onion, finely diced

    Salt

    Freshly ground black pepper

    3 ounces sharp Cheddar, thinly sliced, divided

    8 slices whole-wheat bread

    3 ounces pepper Jack cheese, thinly sliced, divided

    1 large or 2 medium beefsteak or hothouse tomatoes, sliced

    Cooking spray

    Heat oil in a nonstick skillet over medium-high heat. Lower heat to medium. Add onions and saute, stirring, until edges are browned, about 10 to 12 minutes. Season with salt and freshly ground black pepper, to taste.

    Place 3/4-ounce Cheddar on 1 slice bread. Spread 1 tablespoon caramelized onions on top of cheese and top with 3/4-ounce pepper Jack. Top with 1 large or 2 medium slices tomato and other slice of bread. Repeat with 3 other sandwiches.

    Spray a nonstick skillet or griddle with cooking spray and heat until hot. Place sandwich on griddle and weigh down with a heavy skillet or plate. Lower heat to medium-low and grill until underside is a deep brown but not burnt and cheese is partially melted, about 5 to 6 minutes. Flip sandwich and grill other side, an additional 4 to 5 minutes. Slice in half and serve hot.

  3. Melt the butter and brush it on the bread, don't spread it cold.

    Keep your heat at medium on the skillet.

    Use a good quality cheese, like sharp cheddar or Jarlsberg.

    Don't try to cook the sandwich too fast and watch carefully to avoid scorching.

  5. No microwave!  NEVER put bread in the nuker!

    First, use good bread.  Not that junk in a loaf calledd "sandwich bread."  Use fresh French, Italian, or sourdough bread, sliced a bit thicker than regular sandwich bread.

    Next, use really good cheese.  None of those plastic-wrapped slices.  Use real cheese that is easy to melt: havarti, colby, provolone or muenster.  Or a combo of 2-3.  I would not use mozzarella b/c it's chewy, and would not use sharp cheddar b/c it doesn't melt so great... you could use a mild cheddar, though.

    Spread outside of bread w/ soft butter, place on a skillet or grill pan over med. heat.  Don't walk away or you'll burn it!  (ask me how I know...)  Check cooking side often, and when the shade of golden brown you like, flip to other buttered side.  Check often, then when done, remove to plate, cut into pices and scarf down!

Get some fresh bread and some good cheese slices (like Kraft), cheddar cheese preferably.  Put a slice of cheese between two slices of bread.  Put some butter in the frying pan.  Heat to medium.  Butter the "outside" of the sandwich and fry on both sides until golden brown.  Doesn't get much better than that.

  8. Using soft room temp butter or margerine, spread butter on 1 side of each slice of bread. Law each slice of bread, buttered side down on medium heat. On top of each slice spread out a small handfull of shredded cheese, or slice enough cheese (about 1/8 in thick)to cover each slice of bread. The cheese will melt as the bread toasts. Put the pieces If when the toast is nice golden brown then still put the sandwich together and flip back and forth. Then slap the pieces of bread and cheese together, slice and enjoy.

  9. I think the biggest thing is being patient and using medium heat on the stove.

    I butter the outside of the bread, put in the cheese, and then put it in the pan.  I check it and just as one side is as toasted as I want it, I flip it.

    My husband likes to put the cheese in the bread, melt it slightly in the microwave, and then put it on the stove, especially because he doesn't like to wait.

  10. You can't make a good grilled cheese sandwich in the microwave!

    You can use the broiler or the oven or make a fried cheese sandwich in the frying pan.  

    For the broiler/oven method, open-faced sandwiches are best.  You take a piece of bread, spread cheese slices or sprinkle grated cheese evenly over the bread, put it in a pan and place it in the oven on high or the broiler.  Remove when the cheese is bubbly and the bread edges are golden brown.

    For the pan-fried method, butter two slices of bread on both sides.  Place one in the frying pan over medium-high heat and cover with cheese or spread with a processed cheese spread.  Place the second piece of bread over top.  Turn the whole thing over after about 3 minutes.  The bread should be an even golden brown color.  After another 3 minutes, flip again.  When both sides are an even golden-brown color, remove sandwich from the pan and enjoy.  

    Some people enjoy adding ham, cooked bacon, tuna or even mayo to their cheese sandwiches.  Me, I'm a purist.  Just cheese does fine.
