  1. Let me answer the easiest part first....

You can put whatever you like in the pie crust. (That was so easy.)

Ok...here we go with the pastry crust.

    2 cups flour, all purpose

1/2 cup shortening, such as Crisco

    glass of ice cold water

    1/2 tsp salt

Place flour and salt in a large bowl and mix to combine well. Add shortening using a pastry cutter or a fork and mash together untill it looks like small peas. Add water one tsp at a time until the dough comes together. Comes together means it is a big ball. Place the dough in a plastic bag or wrap in some plastic wrap and let it rest in the fridge for thirty mins. or till ready to use. When ready, sprinkle some flour on a counter or your kitchen table and the rolling pin, with a little extra to the side just in case. Roll the dough out to the desired thickness.

The key to great pie dough is numerous. Here are a few...

-Ice cold water is a must. It creates "flakiness" with the fat since grease and water don't mix.

-Let the dough rest in the fridge after mixing. I could explain this, but it would take up too much time, so just do it.

-Do not handle the dough too much. Once again, just do it.

    Enjoy and happy cooking!!!

  2. Pie crust is flour (either pastry flour or unbleached flour), salt, a fat of some kind and a little bit of water to hold it together. The key to good pie crust is minimal handling -especially after you add the water. Otherwise the dough becomes stiff.

You can put any thing you like in it. Apple and pear sounds delicious.
