    2. In any sandwich: One of my favs is cooked mushrooms on wheat with avocado and tomato.

  4. Avocado can be used in hundreds of ways.  The most common is guacamole.

    I don't measure - so - hope this helps.

    3 avocados (depends on the size) - peeled, pitted, and mashed

    Lime juice

    Salt

    Diced onion

    Chopped fresh cilantro

    Roma (plum) tomatoes, diced

    Minced garlic

    1 pinch ground cayenne pepper (optional)

    Mix it all together - put it in the fridge for awhile to cool - and your good to go.

    There is also salad dressing that you can make with it -

    I use the Toffuti sour cream with mashed avocado, diced onion, minced garlic - thin it down with some soy milk that is unsweetened - something that I find refreshing on a summers day.

    You can slice them (skin off of course) and put the slices on a sandwich, in a pita, on top of a tortilla, on a salad just as you would anything else that you would be using.

    You can even make a face mask (beauty care) out of it.  Just type in the word avocado, things to do with - and a host of things come up on a search engine - just pick out the things that interest or appeal to you most.

  6. Seared Tuna with Avocado and Salsa Verde

       1. 2/3 cup lightly packed flat-leaf parsley leaves

       2. 3 tablespoons drained capers

       3. 1 clove garlic, smashed

       4. 4 teaspoons lemon juice

       5. 1 teaspoon anchovy paste

       6. 1/2 teaspoon Dijon mustard

       7. 3/4 teaspoon salt

       8. 1/4 teaspoon fresh-ground black pepper

       9. 1/2 cup olive oil

      10. 4 (8 ounce) tuna steaks, about 1 inch thick

      11. 1 tablespoon olive oil

      12. 1 avocado, cut into 1/2-inch chunks

       1. Put the parsley, capers, garlic, lemon juice, anchovy paste, mustard, 1/2 teaspoon of the salt, and 1/8 teaspoon of the pepper into a food processor. Pulse to chop, six to eight times. With the machine running, add the 1/2 cup oil in a thin stream to make a coarse puree. Leave the sauce in the food processor and, if necessary, pulse to re-emulsify just before serving.

       2. Heat a grill pan or heavy cast-iron pan over moderately high heat. Rub the tuna steaks all over with the 1 tablespoon oil. Sprinkle with the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook the fish for 3 minutes. Turn and cook until done to your taste, 3 to 4 minutes longer for medium rare. To serve, top the tuna steaks with the avocado and drizzle with the sauce.

    Prosciutto/Salmon Wraps

        * 2 ripe Fresh California avocados, seeded and peeled

        * 8 slices prosciutto or smoked salmon

        * Fresh lemon or lime

    Instructions

       1. Cut each avocado into 8 slices.

       2. Diagonally wrap each with a prosciutto or salmon slice.

       3. Arrange wraps on serving platter, garnish with lemon or lime and serve.

    California Avocado and Mango with Yogurt, Honey and Lime

        * 2 ripe Fresh California Avocados, chilled, halved, seeded and peeled

        * 2 mangos, chilled, halved, seeded and peeled

        * Cayenne pepper to taste

        * Salt, to taste

        * ¾ Cup plain low-fat yogurt (Greek style preferred)

        * 2 large limes, juiced

        * 3 Tbsp honey

        * 4 mint sprigs, for garnish

    Instructions

       1. Slice avocado and mango halves lengthwise in ½-inch slices. Arrange the fruit on individual salad plates, alternating the avocado and mango slices. Mix equal parts cayenne pepper and salt and lightly sprinkle over fruit slices, to taste.

       2. Whisk together yogurt, lime juice and honey in a small bowl. Just before serving, spoon 2 to 3 tablespoons of dressing in a stripe over each salad. Garnish with mint sprigs and serve immediately.

        * 1/3 Cup chicken broth

        * 4 tsp vegetable oil

        * 2 Tbsp lemon juice

        * 1 tsp Dijon style mustard

        * 2 boneless chicken breast, cooked, skinned and shredded

    Flavorful Pasta Salad

        * ½ bag organic farfalle pasta

        * 1 avocado

        * 3 Tbsp Parmesan cheese

        * Salt and pepper to taste

       1. Boil the pasta until soft and let cool (stick it in the freezer if you don't have much time)

       2. Dice the avocado into small pieces.

       3. Add the avocado to the pasta, stir in the parmesan cheese. Put the lid on the container and shake.

       4. Salt and pepper to taste!

        * 2 slices of Hawaiian sweet bread (or your favorite bread)

        * 1 small ripe avocado

        * 3 large slices of medium sharp cheddar cheese

        * 4 to 5 tablespoons of Major Grey Chutney

    Instructions

       1. peel and seed avocado, mash avocado with a fork

       2. until coarsely mashed, place avocado mash on bread,

       3. top with cheddar cheese. Spread other slice of bread with chutney.

       4. Combine into sandwich and enjoy.
