How to make carbless meals?

my sisters and i are all on a no carb diet and we all are supporting each other.

my job is to make lunch and snacks

the problem is i dont know how to make any.

please if you know any food for lunch or a snack that has no carbs please tell me!!

  1. Hubby eats very low-carb all the time.  You can have snacks of celery with peanut butter or cream cheese, for any main meal, all you need for a very low-carb meal is some kind of meat or fish and some kind of vegetable that is a low-carb kind - like broccoli, brussels sprouts, cauliflower, etc.  You can get a book listing all the calories, carbs, fats, etc. for all the foods and see what veggies you like and what are low to no-carb.

    Hubby likes to have a salad with a lump of tuna fish mix in the center.  I make his tuna fish mix with black pepper, tuna fish, diced onions (they have a little carb but not much especially at the quantity I use), and mayonnaise.  You can even mix it into the lettuce if you want.  Add a couple of grape tomatoes (again, if you limit your quantity - it's low-carb).

    You can make a nice salad with radishes, lettuce, one baby carrot - diced, different kinds of lettuce (like raddicio, belgian endive, kale, etc.) and have sliced chicken or cubes of chicken in the salad with pecan halves.

    Hubby's fav salad dressing (and one at least allowed on the beginning stages of the Atkins Diet) is Blue Cheese Dressing.  He doesn't eat anything that has more than 5 carbs in it.  That's the number he uses as the point of what he eats and doesn't eat.

    Meats don't have carbs, some veggies have higher carbs than others.  Fruit has a lot of carbs.  Naturally things like flour, rice, noodles, and most processed foods have either carbs or nitrates.  The veggies lowest in carbs are:  alfalfa sprouts, arugula, bok chow, celery, chives, cucumber, daikon, endive, escarole, fennel, jicama, lettuce, mushrooms, peppers, radicchio, radishes, romaine.  In first starting the Atkins diet, you can have one cup per day of these veggies if your salad does not exceed two cups.  These veggies are artichoke hearts, asparagus, bamboo shoots, bean sprouts, beet greens, broccoli, broccoli rabe, brussels sprouts, cabbage, cauliflower, celery root (celeriac) chard, collard greend dandelion greens, eggplant, hearts of palm, kale, kohlrabi, leeks, okra, onion, pumpkin, rhubarb, sauerkraut, scallions, snow peas, spaghetti squash, spinach, string or wax beans, summer squash, tomato, turnip, water chestnuts and zucchini.

    It's not good to go longer than 2 weeks on the very very low-carb diet so you add a little more carbs each week until you are no longer losing weight and not gaining weight.  Then you know exactly how many carbs you can eat without gaining weight.  You can have milk, cream, cheese plus more.  Be sure to subtract the fiber number from the total carbs number to get your "Net Carbs".  Fiber cancels out carbs so if you have 10 carbs in something and 5 grams of fiber, there is only 5 grams of Net Carbs in that something.  The fiber takes care of the other 5.  That's why fiber is so important.  Plus, it slows down how the carbs hit your bloodstream and blood sugar.

  3. These suggestions are OK for a low-carb menu.  But, did you say you are doing zero carbs right now?  That means strictly protein. No vegetables, no fruit, no bread, no pasta.  You do need to watch the fat content, because eating nothing but steak and eggs can still make you overweight.  Stick to the low-fat or non-fat turkey and ham, as you indicated.  Cheddar cheese is also mostly zero carbs.

  4. You can make a vegetable platter. Just concentrate mainly on green vegetables. Cucumbers, Broccoli, Celery, pickles, olives....anything green.  Also you could throw in some cucumbers and a few carrotts.  In the center put a little container full of ranch.  This is healthy and very good!!!

    If you want some type of sweet snacks, you can get some sugar free jello.  Or check out the health bar sections at your grocery stores and you can get some Atkins granola bars.  They are pricey but they still work.


  5. i used to go low carb and stuck to turkey slices for snacks. Salads for meals.   Meat entrees with a side of brocolli, and those low carb lavash wraps you find in the grocery store.
