Question:

How to make coconut sauce?

i go to a Chinese buffet alot, and i will constantly stack my plate with

"coconut shrimp"

i love the sauce

its one of the better tasting things ive had

its kind of thick

and my guess is that it would be made of curry and coconut milk, but i cannot find a recipe or, pre canned mixture..

can someone please tell me a recipe for this sauce?

  1. chicken with coconut sause

    ngredients:

    2 tablespoons peanut or olive oil

    2 tablespoons garlic, minced

    3/4 cup Vidalia onions, diced

    8 chicken b*****s, boned, skinned, pounded to 1/2" thickness

    ***Sauce:***

    3/4 cup white vinegar

    2 1/2 cups water

    1 chicken bouillon cube

    2 cloves garlic

    1/2 teaspoon black pepper

    1/4 teaspoon paprika

    1 teaspoon oregano

    1 teaspoon ground bay leaf

    1/2 cup soy sauce (low sodium)

    1 1/2 tablespoon sugar

    ***To Serve:***

    1/2 cup canned coconut milk

    1/4 cup fresh parsley, chopped

    Directions:

    In a heavy bottomed skillet, saute onions and garlic. Add chicken b*****s and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the saute).

    Sauce:

    In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.

    Pour coconut over chicken and allow to simmer an additional 20 minutes. Place on serving dish and ladle over with sauce. Garnish with chopped parsley.


  2. Lemon Coconut Sauce

    1/4 c Lemon juice

    1 tb Corn-starch

    1 c Hot water

    1/2 c Sugar

    2 tb Brown sugar

    1/3 c Coconut

    Salt

    Instructions:

    Combine sugar, salt, and corn-starch. Add water slowly, stirring

    constantly. Cook over hot water, stirring constantly, 15 minutes. Add

    lemon juice and coconut.

  3. Coconut is really nice,I love it .

    I find that it's better to make you own milk but the pre made cans work well and save a lot of time (prep your creme to be use an other day it's really handy).

  4. This is most likely Thai influenced:

    INGREDIENTS:

    1 cup coconut milk

    1 teaspoon sugar

    2 teaspoons lemon juice

    1 tablespoon curry paste or powder

    1 teaspoon oyster sauce

    PREPARATION:

    In a small saucepan, bring the coconut milk to a boil. Stir in the remaining ingredients and simmer for 5 minutes, until the  the mixture is thickened. Serve hot, or cool and store in a sealed container in the refrigerator. Re-heat before reusing. Yields about 1 cup.

  5. I don't know about that specific mixture, but a good base for chinese-style coconut sauce is to mix coconut milk with vinegar, add some honey and cornstarch, and then your spice of choice :)

    I usually do it with chili-flakes, but it should probably go very well with curry as well.
