How to make dim sum?

i am not chinese but this is my favorite food in the whole world, and i would love to make it??????????????????

  1. Shu mai (siomai in the Philippines) a combination or pork and shimp dumpling is something I will never miss eating whenever we go to dimsum places.

    Ingredients:

    Dumpling

    1 1/2 lb ground pork, those with fat is good for moisture

    1/2 lb shrimp peeled and deveined then minced

    1/2 cup chopped carrots, set aside about 1 tbsp

    1 large onion minced

    4 tbsp minced scallions

    2 eggs, slightly beaten

    2 tbsp sesame oil

    1/2 teaspoon ground pepper

    1 teaspoon salt

    1/4 cup cooked green peas

    1 package of wanton wrapper

    1 tbsp oil

    Dipping Sauce

    1/4 cup soy sauce

    1 tbsp chili garlic paste

    Juice of 1/2 lemon

    1/2 tsp brown sugar

    1/2 tsp sesame oil

    Procedures:

    Combine the dipping sauce ingredients and simmer for 2 minutes. Add sesame oil and stir. Set aside.

    Combine first nine ingredients in a bowl, cover and let sit in the refrigerator for at least an hour to combine all the flavors.

    In the middle of wrapper spoon the meat mixture and gently fold the edges of the wrapper around the meat forming a disk about 1-1 1/2″ diameter and 1-1 1/2″ deep. The wrapper should cover the entire bottom and sides of the dumpling. Garnish each top with a piece of minced carrot and a piece of green peas. Arrange in single layer in a platter or tray until ready for steaming.

    Boil water on the bottom piece of the steamer. Using a brush, lightly oil the bottom of the steaming wrack to prevent the shu mai wrappers from sticking. Arrange each piece with about 1/2 inch space in between and steam for about 15-20 minutes or until done.

    Serve hot with the dipping sauce.

    Note:

    You can add to the meat mixture some dried chinese mushrooms, that are soaked in water then minced. You can also substitute pork with ground beef. For those with seafood allergy, skip the shrimp.
