Question:

How to make good pancakes?

So if I cook pancakes, usually there is a soft gooey spot in the middle. How can I cook the whole pancake without leaving the soft middle but at the same time not burning the outside? Btw im usuing Aunt Jemima Just Add Water without butter or oil.

  1. Get your flat griddle surface hot, pour batter evenly, let bubbles form.

    You're probably making the middle too thick, & not cooking through.

    If you're using a skillet, the centre will be rounded.

  3. Put a little bit of butter in the pan for flavor. Let pan get hot on MEDIUM heat. Drop batter in (for extra kick add cinnamon or blueberries to batter). Let cook until top and edges are "bubbly" looking, flip over, keep a good eye on the bottom since there is really no tell tale sign of when it is done. Make sure both sides are a pretty brown and serve with maple syrup (which you can also add blueberries to and cook in a sauce pot) and a big glass of milk. YUMMY!!!!

Sounds to me as if your burner is too high.  Also keep in mind, if this problem continues you can put pancakes after you have them in the skillet into the oven to finish that "gooey" spot.  Just on low heat until cooked through.  A pan of water (seperate) will keep them moist.  Just lay them on a cookie sheet and put a pan of water in there as well.  ALSO, if you decide to make them from scratch.....make sure you beat the egg well (until fluffy) to make your pancake not so flat, fluffy cooks better!

  6. I use BIsquick mix and a skillet....the more important part is the skillet makes it easier to flip and they space out a little more evenly!

  8. Use a scratch recipe and you won't have that trouble.  Bisquick causes the same problem.  Most of those mixes require additional liquid after sitting mixed in the bowl about 5 min.

    This is the best recipe, EVER!  Make extra, let them cool on a rack, and freeze them.  Then heat up in a toaster oven for freshly-made taste and a quick breakfast.

    The Best Buttermilk Pancakes

    1 cup Buttermilk**

    1 egg, room temp

    3 Tbsp butter, melted

    ¾ cup all purpose flour

    ½ tsp salt

    1 tsp baking soda

    Put the buttermilk, egg and melted butter in a mixing bowl. Stir briskly until the mixture is smooth and blended.

    Stir the flour, salt and baking soda together in a small bowl. Stir into the buttermilk mixture only until the dry ingredients are moistened - leave the smaller lumps.

    Heat a skillet or griddle to medium hot. Grease lightly and spoon out a 3 TBLS of batter per pancake. Cook until a few bubbles form on top and break. Flip the pancake over and cook until golden brown..not too long.

    These are the best pancakes and nothing else will compare after having these!!! Enjoy.

    Makes about 6-8 pancakes.

    **To make your own buttermilk, add 2 tsp of lemon juice or vinegar to a scant cup of milk, stir, and let sit at room temp for 15-30 min.  Stir again before adding to recipe.


  9. How to make good pancakes:

    When both the wet and dry ingredients are mixed, add the wet ingredients over the dry ingredients. Stir gently and not too much. It's important with pancakes not to over beat because it will make the pancakes tough. Make sure you stir it thoroughly, but if there are a couple lumps, that's okay. Lumps are okay as long as there aren't too many.

    Heat a griddle or pan to medium high heat and lightly grease with butter, vegetable oil, or nonstick spray. With a ladle or measuring cup, pour about ¼ cups of batter onto the pan to make pancakes (that are/spaced) about 2 inches apart. Let them cook for about a minute. Little bubbles should start to form across the pancakes. This will tell you it's time to flip. Cook for another minute on the other side.

    When the pancakes are finished, they should have a golden brown color on each side. Serve them warm with butter and syrup. If you want, you could top with strawberries and whipped cream or your other favorite topping.

  10. i love aunt jemima instant pancake mix, especially the buttermilk just add water kind (got some in my cupboard right now actually).

    sounds like your pan is getting too hot. turn your stove on to about medium-high and set your skillet on the eye. after a couple of minutes sprinkle water on the surface of your skillet. if the water droplets "dance" (sizzle and disappear) on the surface of your skillet, then your pan is hot enough and ready to make pancakes! if the water sits, then its not hot enough. if the water evaporates immediately or smokes, then its too hot, and you need to turn the heat down a bit and try again after a minute or two when the skillet cools some. when the skillet is primed for pancakes, ive noticed that if you use shortening instead of butter to coat the skillet the pancakes tend to come out a better color and dont stick at all, and the shortening doesnt burn as bad as butter does when the skillet gets hot. when you take the pancakes off the skillet, butter then when they are still hot and that will give you the butter taste you wouldve got using butter on the skillet.

    i have a recipe for copycat IHOP pancakes i thought id share. you oughtta try it sometime, too. they are pretty close to the real thing.

    1 1/4 c. all purpose flour

    1 egg (beaten before adding to mix)

    1 1/4 c buttermilk

    1/4 c sugar

    1 tsp baking powder

    1 tsp baking soda

    1/4 c vegetable oil

    1 pinch salt

    1. preheat your skillet over medium heat.

    2. mix all ingredients lightly until just incorporated. lumps are okay!

    3. melt a lil bit of butter in pan.

    4. pour the batter by spoonfuls into the hot pan, forming 5-inch circles.

    5. when the edges appear to harden and bubbles appear across surface of pancakes, flip the pancakes (color should be golden brown and they should bounce back when touched).

    6. cook pancakes on other side an additional minute or until golden brown also.

    7. spread butter on pancakes immediately after removing from hot skillet and enjoy!
