Girl I don't know the quantities for each - use your discretion - this is what  I see my mother does do

Dough:-

Flour

Water

salt

oil for frying

Coating:

Granulated Sugar

Grated Ginger (for added flavour)

Knead all the Dough ingriedients together - till it gets really firm.  Roll out flat - cut in pieces - fry till golden brown - drain to get rid of excess oil

In another pot - melt the sugar till it bubbles - add ginger (optional) - add fried khurma and coat it evenly using a spoon - place on paper to kool - sugar will crystalize -
