    4 strips lean bacon

    2 teaspoons brown sugar, optional

    1 pound lean ground beef

    1/2 pound ground pork

    1 medium onion, finely chopped

    1 red or orange bell pepper, finely chopped

    2/3 cup fine dry bread crumbs

    1 large egg, slightly beaten

    1/3 cup grated fresh Parmesan cheese

    1 teaspoon Cajun seasonings

    1 teaspoon Worcestershire sauce

    1/2 teaspoon salt

    1/4 teaspoon ground black pepper

    1/3 cup evaporated milk or whole milk

    1/2 cup barbecue sauce

    Preparation:

    Cut bacon strips in half crosswise and coat with the 2 tablespoons of brown sugar. In a large skillet, cook the sugared bacon for about 2 minutes to render some of the excess fat. Or, cook on a paper plate in the microwave for about 1 minute.

    Heat oven to 350°. Line a baking pan with foil and lightly oil the foil or spray with nonstick cooking spray.

    In a large bowl, combine the ground beef, pork, onion, bell pepper, bread crumbs, egg, cheese, Cajun seasonings, Worcestershire sauce, salt and pepper, and milk. Put the mixture on the prepared foil-lined baking pan and shape into a loaf.

    Spread barbecue sauce over the loaf and arrange the bacon strips over the top.

    Bake until bacon is crispy and meat loaf is firm, about 1 hour to 1 hour and 10 minutes. Let stand for 10 minutes before slicing or moving to a serving platter.

    2 pounds lean ground beef

    2 cups fine dry bread crumbs

    1 tsp. sage

    1 tsp. salt

    1/2 cup milk

    1/4 cup chopped onion

    1/2 tsp. pepper

    1 egg

    Dressing:

    1/2 cup chopped celery

    1/2 cup butter

    1/2 cup chopped onion

    1 small can mushrooms, drained

    1 cup bread crumbs

    1/2 cup chopped parsley

    Preparation:

    Mix meatloaf ingredients and put half into loaf pan. Brown all dressing ingredients together then top the meat mixture in pan. Add rest of meat mixture. Bake at 350° for 1 hour 15 minutes. Can be frozen ahead of time and then baked 2 hours.

Meatloaf is basically ground meat (usually beef but can have others), egg, bread crumbs or rice as a binder, maybe chopped vegetables like peas, onions, carrots, celery and spices.  Formed into a loaf and baked, sometimes with a glaze on it.  I'd pick one that went well with mashed potatoes and gravy, personally.

    Foodnetwork.com has alot of them on it.  Don't skip the veggies because they add moisture.

    1 cup quick or regular oats

    1 onion, finely chopped

    1 T. summer savory or basil or parsley (or oregano if you use ketchup)

    1 egg

    Add enough milk or ketchup or barbeque sauce to make a very moist mix.  Pack in a loaf pan, then turn out into roasting pan or baking dish.  Bake at 350 F. for about 45-55 min. or until done.

    Oats are good for lowering cholesterol, people with wheat allergies, fewer calories than bread crumbs, and really stretch your meatloaf further than bread crumbs.  Excellent flavor, and it holds moistness better in cooking as long as you use enough liquid.


  4. 3 pounds of ground beef

    1/4 of an onion, diced

    2 cloves garlic (or to taste)

    thyme (to taste)

    basil (to taste)

    oregano (to taste)

    salt and pepper (to taste)

    1 can tomato sauce

    parsley

    parmesean cheese

    spaghetti noodles (to combine)

    Mix meat, onion, thyme, basil, oregano, salt, pepper, parmesean cheese, garlic, spaghetti noodles, and 1/2 can tomato sauce in large bowl.

    Place in pan. Mold to pan.  Spread remaining tomato sauce over the top of the meatloaf.  Sprinkle with parmesean and parsley.

    Stick in oven at 400 for 45 min-1 hr.

    Easy and delicious!

    *note: I don't use egg because I found it to be to moist and doesn't combine it well.  I don't use bread crumbs because I don't like soggy bread.  I use noodles because its an interesting twist and oddly enough it combines it very well.  

  5. Meatloaf is one of my favorite recipes and this one come out moist and juicy every time - serve with mashed potatoes and whole green beans or steamed baby carrots.

    Meatloaf

    3 pounds ground beef

    3 large eggs

    1/2 to 3/4 cup Italian style bread crumbs

    1 packet Lipton's Onion or Beefy Onion Soup Mix

    1 can sliced mushrooms, drained - Optional

    1/2 cup sliced black olives 0 Optional

    2 tablespoons BBQ sauce

    1 tablespoon A-1 sauce

    1/2 cup salsa

    1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

    Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

    Preheat oven to 350 degrees.

    Mix together; (don't overmix; it makes the meatloaf tough.)

    2 pounds ground beef

    1 egg

    1 cup oatmeal

    salt, pepper

    Mound into a loaf pan.

    Glaze:

    1/2 cup catsup

    1/2 cup brown sugar

    1 tsp mustard

    Mix well

    Bake loaf for 30 minutes, Remove from oven and spread with glaze (save some for topping on it after it's done). Return it to the oven for another thirty minutes until done. Top with remainder glaze.

    Combine all ingredients in a bowl. Mix thoroughly. Place meat loaf mixture into a loaf pan. Pour can of tomato sauce over meat loaf spreading evenly. Bake at 350º F for 1 1/2 hours.  

    Helpful Hints





    You may choose to substitute chopped onion for Lipton onion soup mix for this Meat Loaf recipe. A medium white or yellow onion works best.
