How to make moist banana bread?

just wondering if anyone has any really good recipies for banana bread i only want to add walnuts as far as extras go. and don't want to use sour milk, and most of the recepies call for like 2cups of banana about how many banana's would that be? thanks!!

  1. This is a different recipe than I'd ever used before.  It's really moist and has a great flavor.

    Cream Cheese-Banana-Nut Bread

    ¾ c. butter, softened

    8 oz. cream cheese

    2 c. sugar

    2 large eggs

    ½ t. baking powder

    ½ t. baking soda

    3 c. flour

    1 ½ c. bananas, mashed (about 4 medium)

    ½ t. salt

    1 c. pecans, chopped & toasted

    ½ t. vanilla

    Beat butter & cream cheese at med. speed until creamy.  Gradually add sugar, beating until light & fluffy.  Add eggs, 1 at a time.  Gradually add dry ingredients to butter mixture, beating at low speed just until blended.  Stir in bananas, pecans, & vanilla.  Spoon batter into 2 greased & floured 8 x 4" loaf pans.  Bake at 350° for 1 hour, or until toothpick comes out clean.  (8 little loaf pans at 350° for 30 minutes.)  Cool on wire racks for 10 min.  Remove from pans, and cool 30 min. before slicing.

    Make sure anytime you make something like this to cream the butter and sugar together very well and beat the eggs in well also.  Don't overbeat after the flour is added.

  3. increase your banana, decrease you dry ingredients.

  4. Make sure the bananas are very ripe.  You could add some crushed pineapple to add to the moisture content. Try 1/2 cup.

    BANANA NUT BREAD  

    1/2 c. shortening or butter

    1 1/2 c. sugar

    2 eggs

    2 c. flour

    1 tsp. soda

    3/4 tsp. salt

    1/2 c. buttermilk

    1 c. mashed bananas (2-3 lg. bananas)

    1/2 c. nuts

    Combine ingredients and mix thoroughly. Grease and flour bread pans and fill half full. Bake at 350 degrees for 65 minutes or until a toothpick inserted comes out clean.


  6. Here is my recipe for banana bread and it makes the absolute best banana bread.

    Banana Bread



    1 1/4 cups sugar   

    1/2 cup butter or margarine, softened   

    2 eggs   

    1 1/2 cups mashed very ripe bananas (3 to 4 medium)   

    1/2 cup buttermilk*   

    1 teaspoon vanilla   

    2 1/2 cups Gold Medal® all-purpose flour   

    1 teaspoon baking soda   

    1 teaspoon salt   

    1 cup chopped nuts, if desired

      

    1. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.   

    2. Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.   

    3. Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.



    *No buttermilk on hand? In an emergency, you can mix 1 1/2 teaspoons lemon juice or white vinegar and enough milk to make 1/2 cup. Or substitute 1/2 cup plain yogurt.

    If you want to try something new and absolutely delicious, trying adding a cupful of peanutbutter chips to your batter.


  7. Add some applesauce...makes banana bread super moist.  I'd say use 3 bananas, but more won't hurt anything.

    3 med. bananas

    1 c. nuts (optional)

    Heat oven to 350 degrees. Grease loaf pan. Mix flour, baking powder, salt, baking soda and nutmeg in a large bowl. Put eggs, butter, buttermilk, lemon juice and sugar into blender and mix until smooth. Add bananas and nuts; continue to mix. Pour into dry ingredients and mix only until flour is moistened. Pour into prepared pan and bake 45-50 minutes.

Make sure your bananas are extra ripe, almost to the point where they are getting very soft and starting to spot up on the peel..  Depending on the size of your bananas it will take 2-3 for 2 cups.  Also if you don't have to be absolutely homemade Pillsbury quick bread- banana-nut flavor is almost as good as the real thing if you add bananas and nuts and it freezes better for me than homemade banana bread.

  10. Two cup would probably be three large mashed bananas. I made a cake the other and day and put vanilla pudding in the batter and it turned out delicious and moist. You could substitute banana pudding, or even chocolate would be good.
