How to make prawns exactly like an asian restaurant ?

the ones at an asian restaurant are delicious but when i make prawns they just turn out rubbery

the prawns that are served in restaurant are slimy and delicious

how can i make prawns like this

any secrets plez let me know!

  1. The trick is not to boil them. If you are making prawns in a sauce type dish then don't cook the prawns in the liquid because that's what makes them rubbery. I always fry my prawns with a small amount of the sauce I'm using (but only enough to cover the bottom of the fry pan and prevent burning, no more) in a separate pan while I cook the sauce or curry, whatever your doing, simultaneously. Then, I lower the heat on the sauce part until it is barley simmering so when the prawns are almost done I can put them in with the rest of the dish and let that cook for a couple of minutes. Just make sure it doesn't boil or simmer too much!
