is it possible to make a cheddar cheese with the use of soy milk? if no, why? if yes, can I use the same recipe?

    From soy "milk" no, from the "curd" (tofu) yes. I've given you a link at the bottom, on that link it tells you the ingredients, measurements and procedure to make tofu, when the process gets to the point of the "press" do as instructed for the 15 minutes and then place the curd in a bowl and add 10oz. of dry cheddar powder, that is the measurement ratio for the 1lb. of soy in the recipe, mix together by hand and then place the mixed curd back into your straining apparatuse and re-press for double the amount of time, you will end up with a semi-firm block.
