  1. it always works fine for me to just leave the eggs out without replacing them with anything...just add a little extra baking powder to make up for it.  If you can't find soymilk, you can use water or any kind of juice; you just need liquid.  They won't be as rich without soymilk, so maybe add a little extra oil to make up for it.

    Here's a recipe:

    1 c flour

    1 tbsp baking powder

    1/4 tsp salt

1 c nondairy milk (or water or juice)

    2 tbsp canola oil (optional)

    3 tbsp sugar

Combine flour, baking powder, and salt in a bowl.  In a separate bowl, combine milk (water/juice), oil (if using), and sugar.  Add wet ingredient to dry and mix until just combined.  Cook like normal pancakes.

edit: yes, any kind of non-dairy milk will work fine.

  2. hi, i found this recipe in my Martin Shaw veggie cookbook

    175ml soya milk

    175ml water

    175g plain flour

    2 tablespoons chickpea flour

    1 tablespoon baking powder

    1 tablespoon sunflower oil

    pinch of salt

    additional oil for frying

place all ingredients(except the oil for frying) in a blender and blend until smooth, or you could whisk by hand until smooth.

heat the oil in a frying pan until piping hot, then drain off any excess.

pour enough of the mixture to thinly cover the frying pan, fry for about 1 minute then flip and fry the other side for another minute. continue until all mixture is gone.

drizzle with golden, maple syrup, jam or sugar and lemon and enjoy!!!!
