We are having a bathalzer size bottle (that sits in a holder to pour from) of champagne at my sons wedding. I am trying to figure out how to most efficiently serve the 150 people champagne timely and also, how long I need to keep it on ice to chill it properly.

  1. You only need to keep it on ice for about an hour (maybe two because of the size of this bottle) before serving.  Champagne should not be ice-cold or it ruins the flavor profile.

I haven't personally poured from this type of device but something critical to remember while pouring champagne is it is carbonated, therefore you will want to hold the glass at an approximately 45-degree angle so the bubbles will not build up in the glass.  The champagne should slide down the side of the glass, not hit the bottom of the glass.  Otherwise you're going to have a line of impatient people while you wait for the fizz to go down in each glass.

  2. Ask a wine connosieur or a famour bar tender in your area.
