How to prepare Fatoush?

  1. Fabulous Fattoush

    Ingredients

    2 lemon cucumbers or 1 English cucumber

    6 scallions

    3/4 lb tomato, chopped

    1/4 lb golden tomato, cut in half

    salt

    3 pita bread or arabic bread, day old

    1 head romaine lettuce

    1 bunch fresh mint

    1 bunch flat leaf parsley, roughly chopped

    2/3 cup extra-virgin olive oil

    1/2 cup lemon juice

    1 teaspoon ground sumac

    freshly cracked black pepper

    lemon wedge, for garnish

    Directions

    1  Whisk together in a non-reactive bowl the olive oil, lemon juice, sumac and black pepper. Set aside.

    2  Dice the lemon cucumbers. (If using English cucumber, peel then dice.) Chop the scallions and mix the cucumbers, scallions and tomatoes together in a bowl. Sprinkle with salt and allow to stand 10 minutes.

    3  Toast the bread until lightly browned then cool. Once cool enough to handle, break the bread up into 1 inch pieces and place in a serving bowl or platter.

    4  Cover the bread with the cucumber/tomato mixture and let stand 10 minutes to allow the bread to absorb the juices.

    5  Chop the romaine lettuce, parsley and mint. Strip the purslane leaves from the stalks. Stir the herbs into the salad.

    6  Pour the vinaigrette over the salad and serve immediately.

    7  NOTE: DO NOT prepare the salad in advance. If the salad is prepared too soon it will turn soggy. Best eaten the same day it is prepared.

    Fattoush or Peasant Salad:

    2 cups shredded lettuce (romaine and/or iceberg)

    1 large or 2 small cucumbers, small dice

    2 medium tomatoes, chopped

    1/2 cup chopped parsley, leaves only, no stems

    1/4 cup chopped mint leaves, no stems

    1/2 to 1 green pepper, diced

    1 bunch green onions, finely sliced

    1/2 teaspoon sumac

    2 pieces of pita bread toasted until golden brown, broken into pieces the size of a quarter

    Dressing:

    1/2 cup lemon juice

    1/2 cup olive oil

    2 to 4 cloves garlic

    1 teaspoon salt

    Pinch of pepper

    In a small bowl mix all dressing ingredients well.

    Put all salad ingredients in a large bowl and toss with 1/2 to 1 cup dressing. Serve immediately.

    1 large romaine lettuce (thinly cut across in 2-3 cm strips)

    3 firm ripe mid-size tomatoes (coarsely diced)

    1/3 cup parsley (coarsely chopped)

    1 carrot (small, coarsely diced) optional

    1/4 cup green onions (coarsely chopped)

    1/4 cup mint (finely chopped)

    1/4 cup olive oil

    1/4 cup lemon juice (more or less to taste) or 1/4 cup pomegranate juice

    1/2 tsp salt (more or less to taste)

    1/4 tsp pepper

    1/2 tsp sumac

    1 toasted pita bread (broken into small pieces). Plain croutons make a good substitution  



        

    Instructions:  

    Put lettuce into a mixing bowl and add all ingredients except the oil and bread. Toss well. Cover and chill for at least 1 hour before serving. The oil and bread are added and mixed in just before serving to prevent wilting of the lettuce and softening of the bread.  


  3. Quick and easy way to prepare fatoush:

        * 1 cup seedless cucumber, diced

        * 4 ripe tomatoes, diced

        * 1 cup flat leaf parsley, chopped

        * 1 red onion, finely chopped

        * 1 clove garlic, minced

        * 1/4 cup diced radish

        * salt

        * 1/2 cup lemon juice

        * 1 tablespoon sumaq (optional)

        * 3 tablespoons olive oil

      

    * 2 pita breads, cut into small pieces and fried in olive oil until crisp drained on paper towels (alternatively, spritz with olive oil and bake until brown and crisp)

    Mix everything together in a bowl except for the pita bread crisps, add those last and eat or serve immediately. What i like to do if serving many people i put the pita crisps on a side plate so they dont get soggy.
