it depends on the cooking.. if it's to be grilled there's no need to remove the scales..

Simply rub the fillets with salt and put them onto a hot oiled pan. Sear on both sides. Delicious!

I add my spices (garlic, Ms. Dash) put a little olive oil in the skillet and cook it.

Sometimes I bake it-but when I bake it I add a lemon juice so that it won't be dry.
