How to prepare yellow summer squash?

My daughter asked me to buy some yellow summer squash at the supermarket while shopping the other day. I bought some and am not sure how to prepare or cook it. The only way I have ever had it was pureed like sweet potatoes. I am looking for another way to cook it different. Can it be sliced and baked or what would you all recommend? Also do I have to peel it first and take the seeds out? I have only bought the bagged ones and never fresh like this time.

I don't know if you mean butternut squash or Yellow (like w/ the zucchini)  The yellow like zucchini- Don't have to peel or seed I slice it in half put a lil olive oil salt and pepper on it and roast it on a baking sheet at 400 for about 12mins (turn it so both sides brown a bit)   The butternut squash- cut in half take seeds out,  put like 1Tbs butter in each hole of the squash, a lil s&p, and sprinkle about 1Tbs brown sugar in each hole.  Bake for about 1 hr (or longer) at 375


  2. because i planted summer squash seeds in the spring, i have plently of yellow squash and have been eating a lot of it lately.

    what i do is wash them throughly and cut it in rounds fairly thin. then i boil them for about 20 minutes, depending on how thick they are cut, until they're tender. i serve them with lots of butter. its a great side dish for chicken.

    for leftovers, how about squash soup?

    you'll need:

    - cooked summer squash

    - chicken stock

    - about 1/4 cup of water (all measurements depend on how much squash is left)

    - a little cream

    - salt

    - pepper

    - nutmeg

    - parsley

    -olive oil

    - parmesan cheese

    in a soup pot, combine squash, chicken stock, water. bring to a simmer. in a food processor or blender, puree until smooth. add back to hot pot over medium heat. add a little cream and spices. simmer for about 10 minutes.

    to serve: ladle into bowls and garnish with drizzle of olive oil, parmesan and parsley.

  3. You do not need to peel it.  Slice it into coins, slice up an onion, toss together, cover with foil, bake at 350 for 30 minutes, uncover, add a few hand fulls of cubed velveeta, toss back in the oven uncovered till the cheese is melted.  It's delicious.

  4. Slice in half, add 1/2 cup brown sugar and 1/4 stick butter or margarine to the center of the squash. Do this after cleaning out the seeds creating a hole to put the new ingredients into. Bake for 45 min at 375* with them covered with foil shiny side out. Serve still with skins on and enjoy.
