I made the recipe below the other day, using jalapenos and red bell peppers for color, and they came out wonderfully!  I halved all the spice/vinegar/sugar ingredients, and used maybe 1-1½ lbs of sliced jalapenos.  They come out sweet and hot, and are great to top a cracker w/ cream cheese!  (I always skip the raisins, btw...)

    Ever Crisp Pickles



    Slice 7 lbs. of cucumbers or green tomatoes and cover with a solution of 2 cups of canning lime and 2 gallons of cool water. You may find the lime at a seed and feed store or hardware store. Just be sure it's CANNING lime.

    Let soak 24 hrs, then rinse well. Cover with clear, cold water and soak 3 hrs. longer.  After soaking, drain, return cukes to the same container and cover with the following mixture:



    2 quarts of vinegar

    4 1/2 cups to 5 cups of sugar

    1 Tablespoon of salt

    1 teaspoon of celery seed

    1 teaspoon of whole cloves

    1 teaspoon of mixed pickling spices



    Let cukes soak in a plastic container in this mixture overnight. (I put a plate on the top and weigh it down with something heavy so the veggies are all under the vinegar and sugar solution. In the morning, put on stove and boil for 35 minutes.

    Add 1 cup of raisins and boil 5 minutes longer. Pack in hot, sterilized jars, get the bubbles all out, seal them and hot water bath for 15 minutes.

    Wash jalapeno peppers. Pack tightly in jar. For every cup of vinegar, use 1/4 cup water, 1/4 cup olive oil, 1 teaspoon salt, and 1 teaspoon pickling spices. Heat mixture to boiling. Pour over peppers so that they are well covered. Seal jars. Process 10 minutes in hot water bath.

    Drying Jalapeno Peppers

    Drying your jalapeno peppers is a great way to keep them long term. You don't want to waste any of those jalapenos picked from that abundant harvest this year. Here are a few ways to dry them so they don't go to waste.

    Wash your jalapenos thoroughly after picking to remove any dirt, then dry.

    Place on a plate or a wire rack in a dry, well ventilated room. You can also string the peppers up on string or thread and hang to dry. Within several weeks, you will have dried jalapenos and you can grind them up or use them as ornaments as desired.

    Freezing Jalapeno Peppers

    Freezing peppers is a good idea if you have a large crop and want to save them for later use. You don't have to cook your jalapenos before freezing, although you can skin/peel them if desired. Just keep in mind that after you thaw them, the skins usually come right off easily. Simply wash the peppers, drop them into a ziplock baggie, and set them in the freezer in 2 lb bags.

    You can also freeze roasted jalapenos and even chop them up before freezing. When you thaw the peppers out for later use, they can become limp and rather squishy, but they won't lose their flavor.

    Pickling Jalapeno Peppers

    Always be sure to wash and dry your jalapeno peppers before pickling them. Also, sterilize any jars and jar lids before using. Boil them on the stove for a half hour, or throw them in the dishwasher for a cycle or two. Here are a couple of pickling recipes to help get you started:

    This is a bit like you'll find in Mexican restaurants. Great when you want to serve the peppers as a side dish or at a picnic, especially if you like spicy carrots like I do.

    Ingredients:

    1 pound jalapeno peppers, quartered

    1 pound sliced carrots

    1 clove garlic, chopped

    1/8 cup salt

    1/8 cup pepper

    1/8 cup white pepper (optional)

    2 cups white vinegar

    Dash of your favorite hot sauce

    Directions:

    Bring the white vinegar to a boil in a small pot.

    Add the sliced carrots, boil 10 minutes.

    Add remaining ingredients. Simmer 10 minutes.

    Remove from heat. Pour Contents into a jar, s***w on jar lid, and let cool.

    Refrigerate.

    Roasting Jalapeno Peppers - How to Roast Jalapeno Peppers

    Try this jalapeno pepper roasting technique for a sweeter flavor in the jalapeno. Roasted jalapenos are great for a multitude of recipes. You can also roast your jalapenos before your preserve them.

    Using a Gas Stove Top...

    Produce a HIGH FLAME.

    Place the jalapeno pepper directly over the flame. Allow skin to blacken and bubble up. It will do so in about 1 minute.

    Flip the jalapeno pepper and blacken both sides. Do not allow to catch fire.

    Add jalapeno to a plastic baggie and seal. Allow to steam in the baggie about 5 minutes to loosen the skin.

    Remove jalapeno from baggie and peel off the skin. A towel will help, or a fork. Discard the skin.

    Cook the roasted jalapeno peppers into any recipe you wish!

    NOTE: You can adapt this recipe to the grill by heating the grill to HIGH heat, and roasting the peppers the same way over the heated grill. Again, the jalapeno pepper skin will blacken and blister. From there, move onto step #4 and continue onward!
