How to rent a flat in Valencia, spain?

I found my flat through an agency named opalocation, pretty efficient. www.opalocation.es

You have also some websites like www.loquo.com. (Agency and few particulars).

www.loquo.com and www.easypiso.com are good places to go.  Probably your best bet though, is to find an area you like and look on the streets for small ads that people have put up personally.  Generally, you tend to find the most genuine answers that way.

A few years ago I was there for about 6 months, and must admit that I liked it, being away from the tourist area it was a very friendly place.

What I did was to find a cheap clean hotel for a few days to get my bearings, in the evening I found that waiters were a valuable source of information, and very quickly found a nice flat at a reasonable price.

Not sure if this would suit you of course, just an idea.
