Great answer from Elizabeth - you can also freeze them sliced or in sauce.  We also can apple sauce and make an apple pie filling that we can as well.  My kids have used the dehydrate on them - they are good with a little cinnamon and sugar.  We also make apple jelly and butter - all good ways to use your crop up for products you use.
