You need to make the video is mp4 format for iPod. If not, you may try some third party software. I recommend Cucusoft DVD to iPod Video Suite to convert DVD movie and convert videos in any format to iPod. It is the fastest converter I have used. You can download this software free from here

Legally the only way is to buy a PocketDish player and then transfer from there to the computer. I'm pretty sure that you can remove the hard drive but that would mean you probably bought the DVR from Dish. I would go with the pocketdish they can be difficult to find (except on Ebay).
