Your mandoline should either have several choices of blades or one blade that you can adjust for thickness.  It depends on what you will use the slices for--and then make them the thickness you need.  Put the slices into water immediately or they will darken and will not look good when cooked.  

    Please DO NOT use your bare hands to push the potato with--use the k**b that has spikes on it that comes with mandolines, to push the potato back and forth.  If it didn't come with one, use a rubber backed potholder.

    If you will be frying the slices, dry them off on paper towels--regular towels may have scent from your laundry detergent or dryer sheets and you don't want the potatoes to absorb that. You can actually use a hair dryer to dry the tops of the slices.  This step is not necessary if you will be cooking them en casserole.

  5. Use the angled blade for taters. You need to wipe the potato across the blade quickly and sharply for nice consistent slices. Watch your finger.
