  3. Usually because it is rancid. Old coffee contains natural oils and after a time they turn old then rancid.

    The 'Best By' date on commercial packaging is a complete joke in attempting to find 'fresh' coffee. Almost universally the coffee companies use a 1 year expiration date. But fresh roasted coffee beans are considered 'stale' after only 21 to 25 days, and only a week after they have been ground.
