  1. I think PVC pipe should be resistant to both of them, as they are both polar and relatively stable.

    Just don't expose the pipe to organic solvents (except when gluing it) - it will dissolve or weaken.

    I assume that you are talking about solutions of these chemicals (fertilizer in an irrigation system?) rather than solids.  Solid ammonium nitrate is an oxidizer, and so there may be a fire hazard if ammonium nitrate dust gets into pipe threads or if PVC dust remaining in the pipes from cutting mixes with it.  It should still be pretty safe; blow all pipes out with compressed air and seal all joints with PVC cement when assembling the system.
