how would an auto body shop get contracts with insurance companies?

Ilive near a body shop. They have been there 20 years,They do quality work, charge a fair price, and generally accept what the ins co is willing to pay. I have used them a couple times, I usually tell the ins co I'd like to use them, and have never had a problem.

They don't get "contracts" because insurance companies don't hire body shops. The owner of the car hires the body shop.
