when doing an interview, browse through their port folio for any cooking experience or some kind of university degree in chef. Ask them about their experience with cooking and what sort of good recipes they can cook, and ask them basic first aid questions like "what will you do if one of your team members slip on a patch of wet floor and fell and broke his ankle?"
