How would you answer this ?

a woman asked me :if you add cheese to a dish it can be refered to as "au gratin" and of you add spinach to a dish it is called "florentine"so if you put spinach and cheese together in equal portions would it be spinach au gratin or cheese florentine ?and I had to stop what I was doing to answer this ?lets see what you all have to say on this one

    Because:  You can serve spinach by itself but you generally don't serve melted cheese by itself (raclette has boiled potatoes and cornichons and Welsh rarebit has toast points).

Good Question Jupiter!  For me, I would say that "Au Gratin" is used specifically for the cooking or baking procedure of the dish, (a gratin is any dish that is topped with cheese or breadcrumbs mixed with bits of butter, then heated in the oven under the broiler until brown and crispy) The term Au Gratin or gratinee refers to any dish prepared in such a manner) so unless your spinach and cheese dish is not prepared and cooked in that manner, then Gratin is not the answer for me.  Florentine is correct, but if adding cheese is in itself, a deemed title, then I would say Florentine Frommage, unless is cooked and prepared "Gratin" style, in the specific round or oval gratin pans or dishes that are oven proof and shallow.   I typed out this answer before looking it up and I was correct.  (challenging myself here), so I hope this helps you out today to answer that womans question to you.  You know how I love a good challenge,  Have a GREAT day!

    Instead, add green grapes and just call it spinach and cheese Veronique.  (containing green grapes)
