How would you control the speed for a pocket bike with electric motor?

Ive got this electric motor from an electric lawnmower and was wondering if I could make a pocketbike or some type of electric bike out of it. But how would I control the speed?

 If you want to control the speed for a pocket bike with electric motor then you can use speed controller device with your electrical motor.  The function of a motor speed controller is to take a signal representing the demanded speed, and to drive a motor at that speed. The controller also measures the speed of the motor.  Electrical motors come in a variety of forms, and the speed controller's motor drive output will be different dependent on these forms.
