  1. Well, gravity is essentially acceleration.  The way to simulate gravity is to have acceleration.  If you continually accelerate your spacecraft, you will feel as if gravity pulls you toward the back of the spacecraft.

    If you don't want to spend the energy (fuel) for a continual boost, you can instead spin the craft on a perpendicular plane (like spiraling a football).  That will create an acceleration outward along that spin, and simulate gravity that way.  Incidentally, this is something that is done fairly regularly in the space program today.
