How would you spell this Polish surname?

I am researching my family history & I need some help. My family immigrated from Poland in the 1800's. Their Polish name was pronounced "O-shef-ski" but no one in my family knows how it was spelled because after they came to America, they changed their name to Schultz. Does anyone happen to know the correct spelling for this Polish surname? Thanks!

    As in son of a nut collecter.

    Sz= doesn't equal Sh .. it's close but not quite.

    and in polish you don't use the letter Y at the end of patronic sunames you use I
